Carefully drop in the whole, unpeeled sweet potatoes and cook for 30 minutes until very tender when pierced with the tip of a sharp knife. Step 1 Add cubed sweet potatoes to pot of cold water. Beat with an electric mixer until smooth. STEP 1 Fill a large pan with boiling water from the kettle and set over a medium-high heat. You can also boil the potatoes whole until soft and then easily remove the skin after once cooled a bit. Mix sweet potatoes, sugar, spices, 1/3 cup butter, eggs and vanilla. Cover with the lid and cook on high for 3 ½-4 hours or on low for 6-8 hours or until the sweet potatoes are tender, stir every hour to prevent burning. Ingredients 4 cups peeled, cubed sweet potatoes 2 large eggs, beaten cup white sugar cup milk 4 tablespoons butter, softened teaspoon vanilla. I prefer to peel and cube my sweet potatoes before boiling until soft. Stir the brown sugar, butter, water, cinnamon and vanilla together in a crock pot then add the sweet potatoes and stir to combine once again.
